Turkish Sponge Cake (Revani)

Ingredients

      For Cake
  • All Purpose Flour3/4 cup
  • Semolina 1/2 Cup
  • Sugar1/2 cup
  • Vanilla essence1 Tablespoon
  • Baking Powder1 Tablespoon
  • Eggs5 large
  • Cooking Oil2 Tablespoons
  • Orange or Lemon Zest1 Tablespoon
    1. For Syrup
  • Sugar2 1/2 cups
  • Water2 1/2 cups
  • Vanilla Essence1 Teaspoon
  • Lemon or orange zest 1 Tablespoon
    1. For Topping
  • Ground pistachiosome
  • Coconut flakes or powdersome



Instructions

  1. Boil sugar and water for sometime to make the syrup, add the vanilla essence and lemon juice, Lemon or orange zest at end. Set aside.
  2. Whisk eggs well then add sugar, oil , semolina, baking powder, flour and Vanilla, combine all the ingredients well.
  3. Pre-heat oven and bake the cake at 175 c  for 25 minutes.
  4. Remove from oven and let it warm. While the cake is warm not hot , cut it diamond shapes using a knife.
  5.  Pour the syrup over the warm cake, let the cake absorb the syrup completely.
  6. Serve it with pistachio and coconut flakes or powder.
