Carrot Walnut Cake

Ingredients
- All Purpose Flour1 and 1/2 cups
- Baking Powder1 Teaspoon
- Baking Soda1 Teaspoon
- Corn Starch2 Tablespoons
- Carrot, grated2 cups
- Brown Sugar1 cup
- Cinnamon Powder1 Teaspoon
- Walnut1 Cup
- Eggs 3 no
- Soya Oil1/2 cup
- Lemon Juice4 Tablespoons
- Powdered Sugar1/2 Cup
- Vanilla Essence1/2 Teaspoon
- For Cake
- For Glaze
Instructions
- Combine and whisk eggs, sugar, oil, Cinnamon Powder well, add in grated carrot , walnut and mix again.
- Combine flour, baking soda, baking powder, corn starch then add in to wet mixture and mix to combine well. Pour the cake batter to pre battered cake pan.
- Pre - heat oven and bake carrot walnut cake at 170 c for 40 minutes (or until the inserted tooth pick comes out clean).
- Glaze : Combine lemon juice, sugar and put it on heat, stir and cook for 4- 5 minutes, add vanilla now. Pour the glaze on the cake and let the cake cool.
