Burani Banjan is everyone favorite, and it is a summer dish.

Ingredients
- Eggplant 1 Large
- Sea Salt1 Teaspoon
- Canola Oil 1 Cup
- Tomatoes2
- Tomato Paste1 Tablespoon
- Sun-dried Tomato 1 Tablespoon
- Water1/2 Cup
- Curd 1/2 Cup
- Garlic 3 cloves
- Sea SaltTo taste
- Chili 1
- Water1/4 cup
- Dry Mint1 Tablespoon
- For Tomato Sauce
- For Mix Curd
Instructions
- Curd: For Curd recipe please check our website. Peel the garlic and grind the garlic, chili with a little salt using mortar and pestle. Mix it with curd and water and set aside.
- Tomato Sauce: In a pan add tomato paste and dried tomato then add water and cook for a couple of minutes and set aside.
- Eggplant:Peel and slice thinly the eggplant. Place them in a tray and sprinkle with sea salt. Then in a pan add oil and shallow fry both sides of the eggplant slices. In a large pan, place the tomato slices, fried eggplant slices and sprinkle the chili slices and add the tomato sauce over it. Cover the pan and steam for 5-7 minutes on low-medium heat.
- Plating: Spread some mix curd on a plate . Spoon on the eggplant and drizzle with some more mix curd on eggplant. Finally, Sprinkle some dry mint and serve.
