- Tomato4 chopped
- Paprika1 teaspoon
- Oil3 tablespoons
- SaltTo Taste
- Chilli2 chopped
- Boil or bake the eggplant.
- Peel the skin then mash it well. Set it aside.
- Heat the pan and add garlic, chilli and chopped onion and saute.
- Add chopped tomato and saute it to soften well.
- Add paprika salt cook for 5 minutes in low heat.
- Add mashed eggplant and cook for 5 more minutes at medium heat.
