Eggplant Dip

Ingredients

  • Eggplant2
  • Tomato4 chopped
  • Onion1
  • Garlic4
  • Paprika1 teaspoon
  • Oil3 tablespoons
  • SaltTo Taste
  • Chilli2 chopped



Instructions

  1. Boil or bake the eggplant.
  2. Peel the skin then mash it well. Set it aside.
  3. Heat the pan and add garlic, chilli and chopped onion and saute.
  4. Add chopped tomato and saute it to soften well.
  5. Add paprika salt cook for 5 minutes in low heat.
  6. Add mashed eggplant and cook for 5 more minutes at medium heat.
