Stuffed Squash

Ingredients

      For For Filling
  • Squash 1
  • Boiled Rice1/4 cup
  • Onion, chopped1
  • Carrot, chopped1
  • Capsicum, chopped1
  • Green Chili2
  • Garlic, minced5
  • Soya granules or ground meat (cooked)1/2 cup
  • Cooking oil2 Tablespoons
  • Salt and black pepper To taste
    1. For For Sauce
  • Tomato, finely chopped4
  • Chilli , chopped1
  • Salt To Taste
  • Cooking Oil 1 Tablespoon
  • Water1 cup
  • Garlic, minced4



Instructions

  1. Cut the top of Squash then empty inside the squash using a knife and spoon.
  2. Heat oil and cook garlic , onion for a minute. Add carrot, capsicum, green chili , rice, soya or meat (any you use, i used soya) season with salt and pepper and cook for a couple of minutes.
  3. Now fill the cooked mixture into the emptied squash and cover it with its cut cap.
  4. For tomato sauce: Cook garlic and tomato in oil then add chili , salt & pepper 1 cup of water. Place the filled squash in center of cooking pot and cover , let simmer on medium heat until the squash soft and cooked well. (i cooked it in pressure cooker it takes less time to cook).
